the gin still

Gin production is a two stage process. First, a base "neutral spirit" is produced. The neutral spirit is then flavored through re-distillation with botanicals such as seeds, berries, roots, fruits, herbs and spices, with its predominant flavor coming from the juniper berry.  


A gin basket is sometimes used to infuse the passing vapor with botanicals instead of soaking the botanicals in the pot still. Some distilleries will simply purchase their base neutral spirit and carry out only the gin distillation on site. Other distilleries prefer to distill their own neutral spirit creating a truly craft gin.

Some regions have a "craft distillery" designation. Usually this designation is accompanied by forms of tax benefits and distribution leniency. 


To obtain a craft designation in your area you may be required to produce your own neutral spirit.  It may also be a requirement that this neutral spirit be produced from local ingredients. It is important for you to determine if there are any craft designation regulations in your area before choosing your method of gin production and your distillation equipment.
